Cherry coffee

Cherry coffee is Bursa’s most fruit-forward expression of Sidama’s highland terroir.

Whole-cherry 'cherry coffee' drying on African raised beds, the fruit shrinking to a deep wine red.

Entire ripe cherries are carefully dried intact on raised African beds, allowing the fruit to naturally infuse the seed and preserve its vibrant character. This traditional whole-cherry drying method locks in intense sweetness, bright tartness and a deep aromatic profile.

The result is a bold, adventurous cup with lively fruit complexity, finishing with a juicy, wine-like body. At Bursa’s high elevations the slow shade-drying process helps maintain the cherries’ rich colour and aromatic intensity.

Especially loved by roasters seeking expressive “fruit-bomb” profiles, or distinctive single-origin pour-overs that highlight Ethiopia’s natural sweetness and layered acidity.
