Dark room drying

Dark-room drying is a controlled indoor protocol in which processed coffee is dried without direct solar exposure.

Coffee drying on raised beds inside a ventilated dark room, out of direct sun, for slow even moisture reduction.

The method prioritises slow, uniform moisture migration to protect the bean’s cellular structure and preserve volatile flavour compounds. Selected lots are dried in controlled indoor environments away from direct sunlight.

The result is a clean, stable cup with enhanced sweetness, clarity and balanced flavour expression — reflecting the true character of our high-altitude Sidama coffees.
